Rosé of Lemberger
The fruit was crushed and de-stemmed into the press and left to soak on skins for 12 hours. The juice was then pressed into stainless steel tank to clarify. Once clarified, the juice was racked off the solids and moved into stainless steel tank and large format French barrel for fermentation. Once fermentation was complete the 2 components were blended together.
A small percent, 4%, of Rosé of Cabernet Franc was blended in for structural support.
Concentrated aromas and flavors of strawberry, cherries, and watermelon with hints of smoke.
