Winemaking Notes: The fruit was machine harvested and pressed into stainless steel tank to settle, it was then racked and readied for fermentation in large format neutral French oak barrels to ferment. Once fermentation was complete, the wine rested on its lees for about 6 months before being readied for bottling.

Winemaking Notes: The Pinot Blanc was machine harvested and pressed directly into stainless steel tank. The juice was fermented to dryness in tank. The base wine was back sweetened to 26 g/L residual sugar to provide food for the added yeast at bottling. The bottled wine was stored on its lees for 3 years before disgorgement. There was no dosage needed for this wine, thus classifying it as Brut Nature.
 
Tasting Notes: Aromas and flavors of lemon and pear, with hints of almond and mineral notes.

Winemaking Notes: The fruit was machine harvested then pressed into stainless steel tanks to clarify. The juice was racked off the solids and moved into 2 stainless steel tanks for fermentation. One tank was inoculated with yeast and the other thank fermented spontaneously. After fermentation, the two tanks were blended.

Winemaking Notes: The fruit was de-stemmed into stainless steel tank and fermented on the skins with spontaneous yeast. Pump overs were done once a day during fermentation. When the wine was fermented to dryness, about 2 and a half weeks on the skins, it was racked off the skins into neutral oak barrels for aging.
 
Tasting Notes: A complex mix of fruity and savory aromas. Aromas and flavors of cherry, smoke, dried citrus peel, spices and forest floor.
